Tarragon is a perennial herb which is closely related to sagebrush. This means tarragon thrives in poor, dry, barren soils in areas with warm days and nights. Tarragon grows to 4 to 5 feet tall. The aromatic leaves are thin and blade-like, with a pointed tip.

Chervil is a popular herb where its root and leaves are used. The chervil herb root for example, is used raw or cooked, but should be done with caution as some reports indicated the root to be poisonous. The raw root is rather tough, but has a nice, aromatic, starchy flavor.
