Filmjölk has a tangy flavor reminiscent of cheese, a custard-like texture, and a round finish. Our personal favorite! NOTE: although this lovely yogurt does have a custard-like texture, it is a drinking yogurt. This means it should not set up like a regular yogurt unless you really monkey with it.

Viili, though thought to originate in Sweden, is a Finnish cultured dairy food noted for its viscous, gelatinous, and almost ropey consistency. Indeed, the longer the strands produced, the more treasured the viili, with some ropes of viili boasting upwards of one foot in length!

Traditional Australian Yogurt is unstrained and unlike most yogurts today in the grocery store as its usually made with whole fat milk. The whole milk makes for a creamy and almost velvety texture. It is a treat in itself. Perfect for homemade probiotic yogurt pops for the kids.

Skyr is an Icelandic cultured dairy product. It has the consistency of strained yogurt, but a milder flavor. Skyr is technically classified as cheese, although widely regarded as yogurt. To be classified as a soft cheese you can add optional rennet. It has been a part of Icelandic cuisine for centuries. This Skyr does NOT have a ropey texture. It’s thick and creamy.

Short Viili is very mild and creamy, with a fairly smooth consistency and a faint sweetness. This culture is not the famed ropey/stringy/slimy variation of viili. We think of it as the less playful and more serious version of this delicious culture rather than the “toy yogurt” our kids love to eat and play with.

Onaka, which literally translates as “stomach” in Japanese, is a very unique culture.  Its a fil culture with added Bifidobacterium Lactis which is popular in Japan. Very refreshing and pure flavor. One of our newest favorites!

Popular in Sweden, långfil is a variant of Filmjölk, but has a long elastic ropey texture and a buttery flavor. Let’s talk about that ropey texture, though: if you’re a kid, you can call this a toy yogurt (we learnt this name from a child, in fact). If you’re an adult who didn’t grow up on it, we promise it grows on you.
