✅【About the White Miso】Shiro-miso (White Miso) refers to sweet rice miso made with rice koji. This miso has a high ratio of rice koji to soybeans, a short maturation period, and a lower salt content than other miso.The unique aroma and sweetness of white miso enhances the flavor of the ingredients.

✅【Difference from Common Red Miso】Shiro-miso is characterized by its white hue, unlike the more common red miso. It often uses rice malt as an ingredient, and its white color is achieved because it is aged for a shorter period of time than most other types of miso.

✅【Plenty of Rice Koji Used】Shiro-miso is usually made with a high percentage of rice malt, but this shiro-miso uses twice as much rice malt as soybeans. Therefore, you can feel the natural and mild sweetness of the koji.
